This recipe was handed down to me by my grade school cook. Now, you’d think, “School, cook, hrmmm? yeeech!” But, she was truly brilliant. She cooked everything from scratch, including home-made bread. We really didn’t appreciate that then but, I do now.
Anyway, at lunchtime, every once and a while, she would serve these wonderful bars. They tasted like nothing I’ve ever had before, or since. Heavy, rich, and full of awful fat, one could live on these things for months and months. I loved them… and couldn’t wait until she made them. The school/church I attended then published a cookbook and her recipe for these bars showed up.
Anyway, Sophie is long gone now, but her food lives on? here’s a little bit of it:
Cream at medium speed for 5 minutes:
1-1/2 cups butter
2 cups peanut butter
Add: 2 cups brown sugar
Add: brown sugar gradually and cream for 10-15 minutes. Scrape bottom and sides often.
Add: 1 tablespoon vanilla
Combine Separately:
4 Cups of flour
1/2 teaspoon baking powder
3 /4 teaspoon salt
Add to batter until combined
Add 2 cups chocolate chips.
Pat into greased cookie sheet(s)
Bake at 350 for 25 minutes
Cut while still warm
